I did some looking around and it looks like we only have baby moon hubcaps that would work on as large as 16" diameter wheels, like the Phoenix USA Baby Moon Hub Cover 12" Diameter # PX1309SS. Since there aren't custom-fit hitches available for a 1958 Chevy Truck you'll be limited to a multi-fit or adjustable style trailer hitch. The Curt 3-Piece Trailer Hitch Receiver # C15511 you saw on Jameson's answer page can fit a 34" frame width and has a deep drop in order to clear the bumper. That said, it could be used on a vehicle so long as the 8 on 6-1/2" bolt pattern, 16" diameter x 6" wide dimensions, and positive 0.5" offset work for your particular application.
